Ingredients for 1 portion:
3oz (85g) (1/3, with peel, raw, 8 ¼ inches long) cucumber
2oz (60g) (3 green outer leaves) lettuce
1.4oz (40g) (2/3 cup chopped) parsley, chopped
0.70oz (19g) (2/3 cup) spinach leaves
dash (0.01oz, 0.25g) sea salt
Coarsely chop the lettuce and spinach.
Finely chop the cucumber and parsley.
Mix with salt in a mixing bowl.
Optional: add the juice of half a lemon.
